  • 2 large ripe avocados
  • 1/4 cup fresh lime juice
  • Zest of one lime
  • 3 tablespoons honey or agave syrup
  • A pinch of salt
  • Optional toppings: Fresh lime zest, coconut milk whipped cream, or crushed pistachios for added texture and decoration.
  1. Cut the avocados in half, ensuring a clean cut for easy pit removal.
  2. Carefully remove the avocado pits, avoiding damage to the flesh.
  3. Scoop the avocado flesh completely into the blender or food processor, leaving no residue.
  4. Add the fresh lime juice, lime zest, honey (or agave syrup), and a pinch of salt. The order of addition does not affect the final result, but adding them sequentially helps ensure no ingredients are missed.
  5. Turn on the blender or food processor and blend until completely smooth, achieving a uniform, creamy texture without lumps. Adjust blending time based on the appliance’s power, typically 2-3 minutes.
  6. Adjust sweetness by adding more honey (or agave syrup) or enhance the lime flavor by adding more lime juice, according to personal preference. Blend again to mix thoroughly.
  1. Once the avocado mixture is well blended, use a spatula to slowly and completely transfer it into the cream whipper, ensuring no mixture is left behind.
  2. Avoid overfilling; fill the whipper to about 2/3 of its capacity to leave room for gas infusion.
  3. Securely tighten the lid to ensure a proper seal and prevent gas leakage.
  1. Attach the cream charger to the cream whipper dispenser in the correct orientation, ensuring a stable connection.
  2. Slowly twist the gas charger until you hear the gas being steadily released into the container, then stop twisting.
  3. Hold the cream whipper dispenser firmly with both hands and shake it vigorously 3-5 times to evenly distribute the gas in the mixture. Be cautious to avoid dropping the whipper.
  1. Invert the whipper and hold it steadily to prevent dropping.
  2. Gently squeeze the lever to evenly dispense the mousse into serving cups or bowls, avoiding spills.
  3. The mousse should appear light and fluffy with a perfect texture. If the texture is unsatisfactory, shake the whipper again and redispense.
  4. Finally, garnish with fresh lime zest, coconut milk whipped cream, or crushed pistachios to enhance both appearance and flavor. Arrange the toppings according to personal preference.

If not serving immediately, store the filled cream whipper in the refrigerator at 2-4°C for up to 24 hours. Before serving, gently shake the whipper to restore the mousse’s fluffy texture. Be careful not to over-shake, as this may compromise the texture.

For a richer texture, add a spoonful of coconut milk whipped cream to the avocado mixture before charging with gas. Pour it slowly along the side of the container to introduce a subtle coconut flavor that complements the lime. Mix thoroughly to blend the flavors.

To add more depth, try mixing in a small amount of fresh basil or mint (3-5 leaves) into the avocado base. Blend thoroughly to infuse the mousse with the herb’s aroma. Extend blending time as needed to fully release the herb’s fragrance.

This avocado lime mousse can also serve as a topping for fruit salads, adding a unique flavor. It can be used as a filling for tarts to enrich their texture or as a spread for toast to elevate breakfast. Adjust the amount of mousse used based on the dish and personal taste.
